Midweek Meal

Taquitos


Ingredients:
1 lb. boiled chicken, shredded
2 Cups cheddar cheese
1/2 tsp. cumin
1 cup salsa
1 cup sour cream
8 totilla shells

Directions:
Combine everything together. Fry one side of the shells very quickly in hot oil. Don't get it crispy, just barely fried. Put chicken mixture on side that wasn't fried. Roll very tightly burrito style and then place in 9 X 13 pan. Bake @ 400 for 20 minutes.

This is a favorite in my meal exchange group, hope it comes in handy.

I just have to include this picture because it's so cute. On Monday we went to Thomas' friend Ellas second birthday party. His other buddy is in the background, I have never seen kids laughing and playing so hard together. It was hillarious, thanks for the fun bash Ellas parents.

I hope you do well tomorrow without yo' man and that he does great in Denver! We sure are hungry up here in Boise if you get lonely...(I am having a hard time sleeping at night but yay I get to be the first to comment)...

Thomas is so cute in that picture. I love his smile and his hair. He really looks like a little boy and not a baby. Thanks for the recipe. I think I might do that for dinner tonight. I have been struggling thinking of ideas these days.

Do you just boil chicken breasts or an actual chicken? I think I can do this recipe. Sounds delicious and not too complicated. I got all the stuff to make the cafe rio burritos this weekend, so I'll tell you how it goes! I invited friends over to enjoy it too. Mom always tells me not to try new recipes on guests, but I never learn. Hope it works out! Cute picts. of Thomas. I love watching kids play together. So funny.
