Midweek Meal

Poppy Seed Chicken
This posted last week accidentally for those of you who caught, you are a dedicated checker, and I thank you! Oh yeah and for all who asked, the pictures are almost always off the Internet unless I can't find one. (I guess that means I should be citing my sources.) Trust me my food isn't that perfect looking:-)

Anyways, this is a really easy yummy dish, I cook a rice with it, the recipe is underneath...

Combine the following ingredients and put in a 9 X 13 inch baking dish.
6 chicken breasts (Boiled and cut-up)
1/2 Cup melted butter
1 can cream of chicken soup
1 Cup sour cream


Combine the following ingredients in a separate bowl and sprinkle on top of chicken mixture.
1 & 1/2 rolls of Town House Crackers, crushed
1/2 Cup melted butter
1 T. poppy seeds

Bake uncovered in a preheated oven @350 for about 30 minutes. Until hot and bubbly.

Savory Herb Rice
Ingredients:

2 cups water
1 tablespoon butter
1 teaspoon chicken or vegetable bouillon granules (or 1 cube)
1 cup uncooked long grain rice
2 tablespoons reduced-sodium soy sauce
1 teaspoon dried minced onion
1/2 teaspoon onion powder
1/4 teaspoon dried basil
1/4 teaspoon dried marjoram
1/4 teaspoon dried thyme
Directions:
In a large saucepan, combine the water, butter and bouillon. Bring to a boil. Add remaining ingredients. Reduce heat; cover and simmer for about 15 minutes or until liquid is absorbed and rice is tender

I Love poppy seed chicken! I make a recipe really similar. I cook brown rice and I serve the chicken on top. I'll have to try your rice recipe. Yum, it makes me hungry thinking about it!
