Midweek Meal

I have had a lot of people ask me what kind of roat I like with the French Dip. I love to get chuck roasts because they are so tender and usually on sale, but any beef one will do.

We love this restaraunt, but now can veto it since we can make our favorite menu item at home! This looks hard, but it is not at all, just a lot of little measurements. It's so good, and a favorite at our house. ENJOY!

Big Kahuna Burrito

Ingredients:
3 lb. pork Roast
1 tsp Oregano
1 tsp Salt
1 tsp Chili powder
2 Tb Dried minced onion
1 c Brown sugar
1 c Worchester sauce
1 tsp Powdered ginger
1 tsp Garlic powder

Directions:
Mix all the ingredients, then rub onto pork roast, cook in crockpot on low all day. Pour off juice when done, and shred the meat. Put meat back in crock pot and add 1 cup of red enchilada sauce and 2 cup of brown sugar. Cook until meat is warm.

Lime Rice

Ingredients:
1 c. White rice
2 c. Chicken broth
Tb Dried minced onion
1 Tb Lime juice
1 Tb Garlic powder
¾ c Chopped cilantro

Directions:
Mix everything except the cilantro and rice together. Cook rice in mixture for about 20 minutes on LOW, then add the cilantro, another Tb. Lime juice, and 1 cup of green enchilada sauce.

The meat makes a lot, so sometimes I will double the rice recipe, and use another can of green sauce to smother the burritos. Put the meat, some black beans, and the rice all in a burrito and then in a 9 X 13 dish. Pour a can of green enchilada sauce to cover shells, and some shredded Monterey jack cheese, cheddar works also. Bake @ 350 until bubbly and cheese is all melted.

yum!! I'm actually making a similar recipe for dinner tonight, but with fewer ingrediants. Ours has pork, brown sugar, salsa and a can of Coke. Tastes just like all the sweet pork from the tin foil Mexican restaurants. You should try it! Let me know if you want the exact measurments. I totally remember you and Nolan always going to Cafe Rio. When I think Cafe Rio, I think Ashley. haha.

Did I miss something? I just noticed that baby ticker on the left, are you prego? You are awesome for putting these recipes up haven't had a chance to try one yet but it's on my to do for this weekend. They look so good.

You are so cute about your recipes. What pork roast do you use with this one? I have some pork shoulder roast, but I don't know if that will work, what do you think?

My mouth is watering just reading this recipe. How did you find Cafe Rio's secret? I'm glad you did and shared with me! Are you excited for Lost tomorrow? I kinda feel not as into it cause it's been so long, but I'm sure one episode will get me back. What did you think of Brooke starting over on IDOL last night?

YUM! I am very excited to try this one out...we've missed Cafe Rio. They have a place called Moes here, but it isn't quite as good.
